  • 750 gms of basmati rice
  • 6 medium sized onions
  • 1/2 kg Chicken (Chicken legs pieces preferred)
  • 200 gms of ghee
  • 100 gms of yogurt
  • 100 ml milk
  • 1 teaspoon Ajinomoto
  • Cloves
  • Cardamom
  • 1-inch cinnamon
  • cumin
  • 10 green chillies
  • 1 bowl finely chopped pudding leaf
  • 1 bowl chopped coriander leaves
  • 2 tsp Garam Masala
  • 2 teaspoons garlic paste
  • 2 inch ginger paste
  • 2 teaspoons fenugreek leaves
  • 2 teaspoon red chilli powder
  • 1 tsp Coriander Powder
  • 1 teaspoon cumin powder
  • 2 tsp turmeric powder
  • 1 Nimbo
  • 1 pinch of saffron
  • 2-3 pinch yellow color
  • Salt to taste

Method to prepare Hyderabadi Chicken Biryani

  1. Put the pressure cooker and pan on the gas. Heat oil in the pan and add the chopped onion and roast it until it becomes golden brown. Now add the green chilis and mix it too and roast it together.

  2. On the other side put the chicken in the pressure cooker and fry it with some oil and add ginger paste, garlic paste, salt, ajinomito, lemon juice and stir them all very well. Let it cook for 2 minutes. Now add mint, dry fenugreek, green coriander and cook it while running. Now it is a turn to add spices. Put coriander powder, cumin powder, turmeric powder, red chilli powder and garam masala powder in one by one and mix the whole mixer very well.

  3. Mix the mixture of chicken and roasted onions and chillis in a large vessel which we have already prepared, run it very well. Simultaneously add curd, a little oil, boiled water or milk and mix it all together. Leave it to cook for 5 minutes.

  4. Now boil water in another vessel and put cloves, cardamom, cinnamon and cumin seeds in it. Add the rice and cook the rice in it for 5 minutes on low flame and stop the gas. On cooling, remove the water from the rice and take out the rice into another vessel.make sure its 2/3rd(70%) boiled.

  5. Prepare the final step, Heat the cooker or any large Handi / Vessel. Now lay one layer of half rice and ghee. Add the mixture of chicken, roasted onions, spices, green coriander and saffron milk on top of it and put the remaining rice layer over it. Now close the lid of the cooker and cook for 20 minutes in a low flame. Now your Biryani recipe is complete. This is the unique specialty of Hyderabadi Biryani.
