Ingredients:

For Filling

  • Oil – 1 tbsp
  • Potatoes – 4 Large boiled, peeled and mashed.
  • Onion – 1 medium finely chopped
  • Dabeli powder – 1 tbsp
  • Sugar – 1 tsp
  • Lemon Juice – 1 tbsp
  • Salt – To Taste

For Assembling Dabeli

  • Pav/Burger Buns – 6-8
  • Butter – 1 tbsp or as required
  • Green Chutney – 1/2 Cup
  • Garlic Chutney – 1/2 Cup
  • Sweet Tamarind Chutney – 1/4 Cup
  • Finely Chopped Onion – 1 Cup
  • fresh Pomegranate Seeds (anaar) – 1 Cup
  • Sev – 1 Cup
  • Roasted Peanuts – 1/2 Cup
  • Chopped Coriander (hara dhaniya) – 1/4 Cup

For Dabeli Powder :-

  • Cumin Seeds (zeera) – 1 tsp
  • Fennel Seeds (Saunf) – 1/2 tsp
  • Black Peppers (kali mirch) – 1/2 tsp
  • Coriander Seeds (sabut dhaniya) – 1 tsp
  • Clove (laung)– 5
  • Dry Red Chilies (sabut lal mirch) – 5
  • Bay Leaves (tej patta) – 2
  • Black Cardamom (badi elaichi) – 1
  • Green Cardamom (choti elaichi) – 4

Method

For Dabeli Powder

  1. Dry roast all ingredients one by one until fragrant.
  2. Allow everything to cool down, transfer to a mixer or blender and grind to fine powder.

For Dabeli Filling

  1. In a pan heat oil add onion and saute until translucent.
  2. Add Dabeli Masala and mix well. Add sugar and cook for a minute.
  3. Add mashed potato and mix well, cook for 2 minutes.
  4. Add salt, lemon juice and mix. Cook for 1-2 minutes and turn off the flame.

For Assembling Dabeli

  1. Heat a griddle (tava), cut pav in centre apply butter, place butter side down on the pan and cook until golden brown.
  2. Toast the pav from both the sides. Repeat same for rest.
  3. Spread green chutney and garlic chutney on one side of pav and sweet tamarind chutney on the other inside the Pav.
  4. Place potato filling, Sprinkle little chopped onion, pomegranate seeds, roasted peanuts, sev , chopped coriander and press gently.
  5. Serve Hot.
