KFC inspired Fried Chicken

For Marination:-

  • 1 chicken, 8-10 pieces
  • 2 cups buttermilk
  • 1 tsp Ginger garlic paste
  • Salt to taste
  • 1 tsp black pepper powder
  • 1 tsp mixed dried herbs(oregano, thyme, rosemary, sage)
  • 1 tsp red chilli powder

For Frying:-

  • 1 1/2 cups (Maida) all purpose flour
  • 1/2 cup cornflour
  • 4-5 tbsp breadcrumbs/crushed cornflakes
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp paprika(optional) powder
  • 1 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 egg
  • 2 tbsp milk
  • 2 tbsp chilli sauce
  • oil for deep frying


  1. Marinate the chicken in the marinade ingredients overnight.
  2. Remove the chicken pieces from the marinade and blot with kitchen towels and remove excess water of marinade.
  3. There should be no extra water left on the chicken.
  4. Set aside until they come to room temperature.
  5. In a dinner plate, mix all purpose flour, cornflour, breadcrumbs/cornflakes, baking powder, salt, paprika, chilli powder, black pepper, garlic powder and onion powder.
  6. In a bowl whisk the egg with the milk and the hot chilli sauce.
  7. Dip each chicken piece first in the egg mixture, then roll it in the flour mixture.
  8. Repeat if you want a thicker coating, one more time in the egg and then in the flour mixture.
  9. Rest the chicken pieces for 7-10 mins in a tray.
  10. Heat oil in a deep frying pan. Make sure your oil is hot enough for frying.
  11. Drop the chicken pieces into hot oil,do not overcrowd.
  12. Fry on medium heat for 12-15 minutes,Flipping the pieces over once in between.
  13. Fry till golden brown from both the sides.
  14. Remove the chicken on an absorbent paper.
  15. Serve with Mayonnaise dip.
