Ingredients

  • Mutton 1/2 kg
  • Onion chopped  2 medium size
  • Tomato paste 2 tbsp
  • Salt 1 tsp heaped
  • Cinnamon(Dalchini) 1 stick
  • Clove(Laung) 2-3
  • Peppercorns(kali mirch whole)5-6
  • Cardamom(choti elaichi) 4-5
  • Bay leaf(tej patta) 1
  • Hing a pinch
  • Curd 1/2 cup or 150 gm beaten
  • Ginger garlic paste 2 tsp
  • Oil/ghee 4-5 tbsp

For the masala

  • Fennel seeds(saunf) 1 tbsp
  • Kashmiri Chili powder(lal mirch) 1 1/2 tsp
  • Coriander powder(dhaniya) 1 1/2 tsp
  • Black cardamom(badi elaichi) 1
  • Coriander leaves(hara dhaniya) chopped 2 tbsp for garnish

Method

  1. Grind together fennel seeds, kashmiri chilli powder and coriander powder in a fine powder, keep aside.
  2. Boil mutton with salt and ginger garlic paste in water till tender.
  3. Heat oil Add the hing/asafoetida to the hot oil.
  4. Add whole spices, bayleaf and saute till aromatic.
  5. Add chopped onion, fry till light golden.
  6. Add ground Masala powder and fry for 2-3 mins or until oil seperates.
  7. Add boiled mutton and yogurt fry for 8-10 mins.
  8. Add tomato paste and 1 cup water cover and cook till oil floats on top.
  9. Turn off the heat.
  10. Garnish with chopped  coriander leaves serve with Naan/Paratha/steamed Rice
