Vada pav is a popular fast food / street food in Mumbai which is also known as Indian burger among the youth and it is usually served with dry chutney of fried green chilli, tomato ketchup and garlic. It is very easy to make, the bread is chopped with green chutney and dried garlic sauce from the middle and then the potato wadas are kept. Pav vada, made in this manner, is more popular in Maharashtra. However, in Gujarat and generally in Ahmedabad, the Pav is cooked with dry garlic chutney and butter and then the vada is kept between them. It is said in this simple recipe how to make Vada Pav in both ways.

Ingredients for preparing Vada Pav :

  • 10 pies or burgers
  • 3 large potato boiled and mashed
  • 1/2 teaspoon mustard
  • 1 pinch of asafetida
  • 1 1/2 teaspoon ginger-garlic paste
  • 2 green chilies finely chopped
  • 1/2 teaspoon chili powder
  • 1/2 spoon Amchoor
  • 1 teaspoon lemon juice
  • 1 teaspoon oil
  • 2 tablespoons chopped green coriander finely
  • Salt to taste
  • 1 cup gram flour
  • 1/4 teaspoon red pepper powder
  • 1 teaspoon oil
  • 2 pinch baking soda
  • 1 pinch of ash powder
  • Salt to taste
  • Oil to fry

Ingredients for making Vada Powder Chutney

  • 1 cup dried coconut cut into small pieces
  • 2 teaspoons white mole
  • 6-8 whole red chillies
  • 1 tablespoon wheat peanut grains
  • 1/4 cup grated garlic
  • 1 teaspoon tamarind pulp
  • Salt to taste
  • 1 teaspoon oil

Method for making the famous Mumbai Vada Pav

To make filling

  1. Heat oil in a pan and add mustard seeds and asafoetida, add green chili and ginger garlic paste after the rye and cook for  some time.
  2. Then boiled some of the boiled potato salt, red chillies, amchoor powder, then roasted. Close the gas of lime juice and green coriander mixed,
  3. And let the mixture be completely cold. After cooling, give 10 wings in equal parts and make rounds.

To make the solution

  1. Add Besan and Baking Soda and mix them properly. Make a thick slurry of oil, salt, red chilli powder, asafetida powder mixed with water, add besan and baking soda mix to it.
  2. Now heat the oil in a pan, after the oil is heated, dip into a mixture of solution and put it in oil carefully,
  3. Similarly, put 4-5 Vadas. Take the floor until it turns golden on medium flame. In the same way, Fry all the Vadas.

To make chutney

  1. Heat a pan, add chopped coconut and fry until it becomes golden brown on low flame.
  2. Then put sesame seeds in the same pan and fry them and take them out till they are too light.
  3. Now put one spoon of oil in a pan and fry the garlic for a while. Turn off the gas and let it cool down.
  4. After cooling, grind all the ingredients together and grind them fine.
  5. Chutney is ready

To serve Vada Paddy

  1. Cut the bread or banana from the middle and chutney in it and then turn off a wad.
  2. Serve with green chutney or tomato sauce.
